The seeds from the tropical papaya fruit is a better alternative to standard black peppercorn for several reasons.  These incredible edible gems are one of nature’s super seeds packed with nutrition and other amazing health benefits.  Papaya seeds have been used in Asia for centuries for its culinary appeal and amazing health benefits.  As a chef I have been experimenting with papaya seeds for several years and have become fascinated by them.  They have a more complex and spicy-fresh flavor when compared to all peppercorns–pink, green, tellicherry black, malabar black, sarawak white, and muntok white.  That said, we want to market Papayacorn as the next, must have culinary condiment for both home cooks and professional chefs. We would love to see it on every home and restaurant table!

Papaya seeds are indeed a culinary treat, with numerous health benefits.  They are good for the digestive tract, reducing gas;  it increases hydrochloric acid in the stomach which aid with digestions;  it fights bacterial infection; and has vital minerals, vitamins, and antioxidant properties.

The seeds are contained in little juice sacks. Traditionally, you would extract the seeds from the juice sacks,  a very labor intense process that results in the loss of some health benefits contained in the juice sacks.  Also, the seed are usually dried in the sun for several days, exposing them to the elements, losing some of their flavor and health benefits in the process.  Borrowing a technique developed by the Ministry of Agriculture in Sarawak for processing high quality peppercorns,  I developed a special secrete method (I cant say)  that dries out the water in the seed sacks without getting rid of the healthy, tasty properties.  Thereby creating a super seed, that’s tasty and super good for you.  We sourced out fresh organic papaya seeds from a  papaya grower in Asia.  The seeds are from a special breed of papaya, prized for their amazing seeds.  They take extra time and effort to nurture the plants to produce bold, rich, spicy flavor seeds, that taste better than any peppercorn available.  Our papaya caviar is come from the same papaya fruit, but are harvested a little before the papaya matures, yielding a  translucent seed very similar in appearance to fine caviar.  Special care is taken to “cure” and brine the young seeds to make our “papaya caviar.”  The fresh, spicy-clean flavor goes well with seafood, poultry and vegetables.

Culinary uses include:

  • Meat tenderize:  Rub cracked papayacorn as you would black peppercorn on meats to tenderize it.  Here you get a meat tenderizer and seasoning agent all in one.  It contains the chemical  Pepin which breaks down protein, making meat tender.
  • As black peppercorn:  Sprinkle on finished food,  use in rubs, and while cooking as you normally would black pepper.
  • As green pepper corn: Use our brine papaya caviar in sauces and the same way you would use French green peppercorn.

Health benefits include: 

  • Antibacterial properties:  Papaya seeds are effective against E. coli, salmonella, and staph infections.
  • Kidney health:  It can help protect your kidneys from toxins that can lead to kidney failure.
  • Antioxidant properties:  Helps fight free radicals in your body that damage cells.

 

We will package our Papayacorn ™ in three varieties:  

  1. Dried papayacorn. Package fresh dried like black peppercorn, called Papayacorn;
